I think there are ways you could get good calories into Indy without the attendant costs of fried foods.
One thing to think seriously about is that when oils are heated to high temperatures there is a chemical which is produced that is NOT good for anyone, especially someone who already has compromises of organs and immune functions to consider.
On top of that, while Indy is self-limiting and the taste of fried food may entice him to eat, the reality is it may cost him in the long run because of cholesterol in the foods. You already have concerns with regards to his kidneys and urinary tract and I think you might want to way the cost of introducing higher external cholesterol which may cause problems for his liver. Baking and steaming versus frying isn't just about reducing calories. I think a better way to go might be to introduce some higher calorie foods and stick with freshest, cleaniest ways of preparation.
Indy's a challenge though and in the long-run it's you who knows him and his needs best. Maybe you can find a way to strike a balance and save yourself from being a short order cook all the time.
