I just got the results from Daniel's food allergy test. They did the blood test so it was the very detailed list of foods. Now I am so confused. I spoke briefly with the nurse about the results but now i have a ton of questions that i hope one of you can answer.
1. Currently my son is GFCF, but no allergies came up to any dairy products except Cottage Cheese (level 1), so should we stick with CF? Or let him have yogurt and cheese again? we just went Casein free (breastmilk) 3 weeks ago. But that was all he had been getting since May.
If your original reason for going cf was because of behaviour or brain problems from the casein, it's unlikely those would show up as an allergy on blood tests. If you are seeing improvements in the reason for going cf, I would not put him back on casein because he's not "allergic". People can have intolerance and other responses to casein that are not technically allergies but which make a person not tolerate casein well. I'm sorry I can't remember the original reason you wanted to go cf, but the biggest question is whether or not you have seen improvement.
2. Gluten and wheat were both level 1 allergies. Will staying GF still help?
Again, a person can have an intolerance without having an allergy. Being exposed to something that contains gluten when one has an intolerance means damage to the gut, the brain and other organs despite the low gradeness of the allergy identification. As well, if you are seeing improvements in your original reason for going gf, then continue. There is benefit in being gf if you are seeing improvements.
3. Soybean came up as a level 3 (the worst) allergy. I know there are two types of soy: the protein and the other type (can't remember now). would both of those be off limits? (this scares me the most, because soy is in everything...but if he can have casein again then i can do regular butter, etc instead of the vegan versions)
If you got results on an allergy blood test, you got a response to soy protein. Technically allergies are only to proteins, so you can try just avoiding soy protein and using soy lecithin and soy oil for now. The problem will be in the degree of purity for those things. If you find that he is worsening or returns to certain problems you thought had been eliminated than I would consider being more strict with soy lecithin and oil as well. Instead of using butter, you could try using ghee (clarified butter) which contains no dairy proteins and see how he does with that. Some people who are casein sensitive can tolerate ghee fairly well especially when they have a soy protein problem.
4. Of course his two favorite foods, peanut butter and orange (juice), came up as level 3 allergies. PB is his basic protien. He eats no meat other than fish and bacon. Many other nuts came up as high level allergies too (sunflower, safflower, walnut, cashew). The least bad was almond. So it is ok to do almond butter occasionally? Are there any other typse of butter I dont know about?
You may want to consider a rotation regime for these if you absolutely can't get him to eat anything else. You might consider rotating the four least high using one each day. So Day 1 Almond, Day 2 Pumpkin Seed, Day 3 Tahini (Sesame Seed), Day 4 Hemp Seed (this is an example). If peanut is that high though, you should avoid it. Peanut is notorious for developing into anaphylaxis. You can make a "butter" out of just about any nut or seed. Some are available commercially like hemp and sesame seed butters, and others are not or are so expensive it's impossible, but you could try making those at home fairly easily. Coconut can also be made into a spread and does have some benefit in fighting yeast overgrowth as well, if that's of concern in his self-limiting behaviour.
Lots of level 1 stuff came up so I guess I will have to figure out how fequently he is allowed to have those items.
You can either avoid them altogether or consider a rotation regime for lower grade allergens. It gets complicated, but if you have a chart and a planned menu, it's easier.
