OTS had to share my Stupidity

 
Not stupid.  We just live in an alternate universe.  I took a friend from the pool shopping last week since it was rainy and she had no ride.  She told everyone in class today that she had never shopped with anyone like me and that I just go in, head to the produce and then the eggs and meat and she had never not gone up and down the aisles.  Well, I don't shop the aisles.  I get the produce that is on sale, the eggs were on sale, and the meat on sale and I'm out. 
She said I never even slowed down for the 'treats'.  I asked what the 'treats' were and she said no bakery, no candy, and no chips....it was like I didn't even see them.  Well that's cuz I didn't.  Oh well.... 
One of the ladies in my class said she had always wondered if I really ate like I say I do and now she believes that I do.  Too funny.  Really Theresa, why would you pay attention to the bakery?  It's not a safe place for us to shop!  In your universe, radishes are 'treats'.  In mine, nuts are....  We just march to a different drummer...

probably sleep walking at this point

You are right, it can be done but think back to when you started and how much you have learned.  First she is new to this and second, she is working two jobs and is a single parent.  That means she cannot devote all day to this every day.  Heck, she is probably sleep walking at this point with her head spinning with all the new information she's trying to absorb.  She may not have the means to garden and grow food and even if she does, on top of two jobs and being a single parent, that is a lot to ask.  We really need to meet people where they are here. 

You have one of the biggest hearts I've ever encountered, and you mean well and we all know that.  We've had a lot more time than those who are just starting out.  It is a lot to learn and even more to do and working two jobs and parenting just makes me worn out reading it.  So saying someone just has to "be willing to put the work into it" is a bit of glossing over the points that they have a lot going on and a steep learning curve.

I'm tired just thinking about what all the working parents on here do.....  It's all I can do to take care of me and a cat....

Garlic Chicken Fragrant Rice On a Budget

 
Garlic Chicken Fragrant Rice
I found this last night on allrecipes.com   I have a 25# bag of Jasmine Rice that needs eaten, so I did a search for jamsine rice on the website and came up with this.  I will share how I tweaked it below.

3 cups uncooked jasmine rice

  • 3 cups water (used GF chicken broth instead)



  • 2 tablespoons sesame oil (skipped this, did not have any on hand)



  • 2 cubes chicken bouillon(skipped this since I used GF broth.



  • 1/2 cup olive oil (Added 2 Tablespoons as this sounded like WAY too much oil!)



  • 1 green onion, chopped (chopped up a small onion instead)



  • 2 cloves cloves garlic, smashed



  • 1 (2 inch) piece fresh ginger root, crushed (skipped as I did not have this on hand)



  • 1 chicken thigh with skin (skipped this since I did not have on hand, but I added 1# cooked ground beef)

    1. Place everything in a rice cooker (you can add the cooked ground beef later if you want).
    2. Stir, and then place chicken thigh on top. Turn on rice cooker.        
    When the rice is done, mix the rice so that the oil will be evenly mixed with the rice. Serve.
    It was really good!

    about having to be GF/CF for a week

     
    I go along for about 2 weeks eating fine and then all the sudden I get down and out about having to be GF/CF for about a week and then I am on the up swing again. I am wondering if it's the looming holiday season? Or is this just normal in adjusting to the lifestyle I have to live? I've been GF since the end of May (never cheated) and had been pretty much CF for about 10+ years (eating a tiny bit of dairy here and there).

    I started reading the Living Without magazine today that a friend sent to me and that perked me up some today. I miss not being able to just grab something, I don't like to plan ahead. My dh polished off the chicken and dumplings that I had planned for a few meals and all the sudden it was gone   :O(  So I feel like I am at square one again. I did find a recipe that was pretty good last night on allrecipes.com  I will post that next.

    Your not alone, my down swings happen when I am stressed, angry, or too busy and don’t plan well.  Which happens quite often.  I was so mad after the bread episode today that I just about stopped at McDonalds and yes darn it I wanted something I knew was gonna knock me flat, I guess kind of like self mutilation, it feels good and it’s a way to deal with things but you pay for it later.   Anyway I didn’t but I did come home and have way to much leftovers but at least it was allergy free for me.  Even though I lost, I won because tomorrow I will just be fatter not sicker.

    We live each day like it is brand new, that’s the only way we can.
