Gluten-free beer-battered fish fry batter produces

Gluten-free beer-battered fish fry batter produces crisp, light fried fish. It makes a delicious gluten-free batter for onion rings and shrimp too! If you don't like beer batter just substitute club soda for the beer.
Prep Time: 0 hour, 5 minutes Cook Time: 8 minutes
•Oil for Frying (Use an oil designed for high heat frying, preferably peanut or coconut oil)
•2 pounds fresh fish fillets
•1 cup all purpose gluten-free all purpose flour mix (I used Bob's Red Mill All Purpose GF Baking Mix)
•1 cup cornstarch
•1 teaspoon GF baking powder
•1 teaspoon sugar
•1 teaspoon cayenne powder
•1 teaspoon GF garlic powder
•1 teaspoon GF onion powder
•1 teaspoon salt
•12 ounce bottle of gluten-free beer OR 12 ounces of club soda
1.Combine cornstarch, gluten-free all purpose flour, baking powder, cayenne pepper, sugar, garlic powder, onion powder, salt and pepper in a large, plastic zip lock bag.
2.Shake the bag to thoroughly mix the dry ingredients. Pour this mixture into a medium sized bowl.
3. Add gluten-free beer or club soda and mix until the batter is smooth and not too thick or too thin. Add more liquid if the batter is too thick.
4. Dip fish fillets in batter, making sure both sides are coated. Hold above the bowl to let excess batter drip off.
5.Fry in hot oil until golden brown.

This one might could be subbed out with GF Bisquick in a pinch and use milk as suggested at the bottom of the recipe.
Basic Beer Batter.
1 cup Self Rising Flour/Or GF Bisquick and a little Corn Starch or Masa ?
1 tsp salt
1/4 tsp pepper
2 eggs beaten
1 Cup GF Beer.
You can sub out beer with milk if you do not want to make beer batter

Extra Crunchy Recipe translated from a Ramen Noodle Crunchy Onion Rings Recipe.

 
Ramen Noodle Crunchy
Use Mai Fung/fun Rice noodles and your own seasonings instead.
Ramen Noodle Crunchy Onion Rings. use with the last beer/soda onion rings recipe I posted.. I've never tried this one..
The ultimate crunch experience.

Use the inexpensive, cellophane wrapped `block'-type ramen. Choose a flavor you like; I used Roast Beef but most would work equally well, I think.
The batter has to be quite thick to hold the crushed ramen in place, so test one and whisk in a tablespoon or so of additional flour if necessary.

Ingredients:

2 blocks ramen noodles (with 1 flavoring packet reserved)
2 cups Basic Batter (made with gf beer)…see the ingredients list below.
Oil for frying
1 very large yellow or Vidalia onion, cut and separated into 3/4 inch rings

Preparation:

Break off half of one block and pulse it in a food processor or blender until finely ground. Stir these into the batter and set aside. 
Break up the remaining noodles into small chunks and either processes them carefully in small batches until they're chopped into small bits 
(but not ground) or put them in a heavy duty plastic bag and crush them with a rolling pin or soup can. Spread the crushed noodles in a shallow 
bowl and shake the contents of the flavor packet over them; mix thoroughly.

Heat 1/2 to 3/4 inches oil in a heavy skillet to 375 degrees. Dip an onion ring into the batter, coating thickly, and dredge in the crushed noodles. 
Lay it gently into the oil and cook until golden, turning once. Remove and drain on paper towels. Repeat with remaining rings. You can do 2-3 at a 
time depending on the size of your skillet, but take care not to crowd the pan or let the temperature drop too much, or the rings will turn out greasy.

I liked Amy's frozen cheese pizza back when gluten was the only thing I had cut out.  You would want to send a pizza pan and instructions for the babysitter on how to avoid cross contamination. 

I love Kinnikinnick frozen crusts for pizza, garlic bread and cinnamon bread.  On the breads if you cut in long, skinny rectangles, you have bread sticks.  Here are the recipes:


Kinnikinnick Pizza,Bread Sticks or Cinnamon Sticks


Start browning or defrosting hamburger or sausage.

Glass baking dish - Crust - 375 – 10 minutes

Add toppings (breadsticks – safflower oil, garlic powder, onion powder; salt and cheese are optional; cinnamon sticks – oil, honey, cinnamon) - 375 for 5 minutes.  Garlic breadsticks are good with pepperoni slices on top or as the bread for lunchmeat or BBQ beef sandwiches.

I brown whatever amount of ground beef that fits in my Dutch oven.  Drain and package in 1 lb. and 1/2 lb. amounts.  Put in freezer bag and flatten.  Then when you want pizza, take one of the frozen 1/2 lbs. out.  Dump it in a saucepan and heat covered on medium.  Use it to top your pizzas.  If all you have are frozen 1 lb. packages, take one and hit it gently on the corner of your countertop to break it in half.

How about making a frozen pizza at home and microwaving or eating it cold at the babysitters.
